What makes some honey darker than others?
Certain plants that the bees pollinate have darker pollen and nectar, and contain different minerals in higher amounts that contribute to the darker color of the honey. Beekeepers will find the honey they harvest will be different colors in different seasons, based on what plants are in bloom and when.
Dark honey is made by bees who are foraging for nectar from plants like buckwheat, palmetto, or black locust trees. These plants produce darker-colored nectars, which make this honey thicker and richer than other types of honey. Dark varieties of honey also tend to have a stronger flavor than lighter varieties.
Over time the honey will darken and flavor will change but it will be safe to eat indefinitely. As it darkens, it may lose some flavor or become cloudy. As the honey becomes cloudy, you may even notice crystals in it. This will not make the honey unsafe as long as it has been stored properly.
Honey color ranges from nearly colorless to dark brown, and its flavor varies from delectably mild to distinctively bold, depending on where the honey bees buzzed. As a general rule, light-colored honey is milder in taste and dark-colored honey is stronger.
Because darker honey contains less water than its lighter cousins, that means that the nutritional benefits of darker honey are more amplified than light honey. Really dark, antioxidant rich-varieties like manuka honey can also cost more as they contain more nutritional benefits per measurement, per Eater.
The Warm Water Test: Add a teaspoon of honey to a glass of warm water. If the honey is pure, then it will sink to the bottom of the glass as a lump or stick to the spoon when the mixture is stirred. If the honey is adulterated with any kind of syrup, it will dissolve in the water.
Colour and Taste of the Honey
One rule of thumb is that pale and clear honeys have a soft, delicate taste, while honey with a dark colour tends to have a sharper, more pronounced taste. An overview of our honey assortment can be found here.
If you want to be sure to get all the health benefits, then you should choose raw honey. commercial honeys are processed, they may have lower levels of antioxidants.
You may be getting darker honey because of: Floral source of your nectar. Exposure to heat in processing and/or storage.
Keep container in an area that will stay at average room temperature. Because honey is best stored at room temperature (somewhere between 64 to 75 F), keeping your container of honey on a shelf or in your pantry is recommended.
Can you eat 3000 year old honey?
In 2015, archaeologists reported that they'd found 3,000-year-old honey while excavating tombs in Egypt, and it was perfectly edible. This durability is thanks to the unique features of honey: it is low in water and high in sugar, so bacteria cannot grow on it.
For best quality, store honey for up to 12 months. After that time, it remains safe but the quality may not be as good. Honey can become cloudy, crystallized or solidified but this is not a safety concern.

Even though their colors range from what beekeepers call “water white” to “motor-oil black,” raw and unfiltered varietal honeys are almost always cloudy and opaque, with their natural pollen––and flavor––still intact. Shop for honey by cloudiness, not color, and you won't be disappointed.
Heating up to 50°C (122°F) for more than 48 hours turns the honey into caramel (the most valuable honey sugars become analogous to sugar). Heating the honey to higher than 140°F for more than two hours will cause rapid degradation.
Honey May Change Color & Texture
While honey never spoils, it may change color (from clear to cloudy) or texture (thicker and grainier) over time. That's ok! Unless your honey becomes exposed to moisture and ferments (which will be super obvious), it's safe to consume.
Dark honey has the highest antioxidant effect and phenolic content.
Most pasteurized honey tastes the same, so look for raw, unfiltered honey. It's the best way to experience its true flavor and health benefits, and it also keeps you from accidentally buying fake honey. Remember, quality honey, crystallizes eventually.
There's a high chance that your store-bought honey is fake. While fake honey usually includes some amount of real honey, it is often mixed with other corn, rice, or sugar cane syrup to reduce its cost. These fillers are far cheaper than raw honey and are used to produce more honey, quicker.
Testing pure honey with water
Add a spoonful of honey to a glass of water. Pure honey should settle in the water. If your honey dissolves immediately, it's possible it also isn't pure or has been altered in some way.
To perform this test, try dipping a matchstick/cotton bud in honey and then light it. If it burns, that means the quality of your honey is pure. Adulterated honey might not show consistent results or burn properly, due to the fact that moisture or fermentation which might affect its quality and taste.
Should honey be darker or lighter?
Raw honey contains pollen, bee saliva, nectar, sometimes even dirt collected by honeybees, creating a darker composition. When manufacturers remove these external components of honey through a filtration process, the consistency and color of honey will become lighter in color and weight.
Dark honey usually has a more intense, pungent taste than light honey. Some darker varieties of honey include buckwheat, blackbutt, wildflower, thyme, dandelion, jarrah, chestnut, meadow, and manuka honey, many of which contain a high concentration of antioxidants and other powerful nutrients.

Always keep your honey in a glass, airtight container. Otherwise, the hygroscopic (water-loving) sugars in the honey will absorb moisture from the air, leading to the growth of undesirable yeasts.
One of the reasons most grocery store honeys will not crystallize is because they have been pasteurized, which requires high heat. The most ideal temperature to induce crystallization is 57F–the further you get away from that number on either side, the slower a honey will crystallize.

Glass jars with lids are also ideal for storing honey as long as the lids are on tight so the honey won't be exposed to air, while not being used. It isn't recommended to store your honey in non-food plastic containers or metal containers because they can cause honey to oxidize.
